Ingredients
- 2 whole branzino, cleaned and gutted
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons unsalted butter, melted
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh rosemary, chopped
- 1 lemon, thinly sliced
- ½ cup cherry tomatoes, halved
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the branzino dry with paper towels and make 3 shallow diagonal cuts on each side.
- Rub olive oil over the fish and season both inside and out with salt, pepper, and paprika.
- Stuff the fish with minced garlic, thyme, rosemary, and lemon slices.
- Drizzle melted butter over the fish and place cherry tomatoes around it on the baking sheet.
- Roast for 18-20 minutes, or until the flesh is opaque and flakes easily with a fork.
- Broil for an additional 2 minutes for a crispy skin, if desired.
- Garnish with fresh parsley and serve with extra lemon wedges
Notes
- You can grill the branzino instead of roasting—just cook for 4-5 minutes per side over medium-high heat.
- Serve with roasted potatoes, salad, or steamed vegetables for a complete meal.
- If using fillets instead of whole fish, reduce cooking time to 12-15 minutes.
