  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets (steamed or blanched)
  • 1 can (10.5 oz) cream of chicken soup (or homemade)
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese (divided)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ½ cup sour cream (optional, for extra creaminess)
  • ½ cup crushed Ritz crackers or breadcrumbs (for topping)
  • 2 tablespoons butter (melted, for topping)

Instructions

  • Preheat Oven to 375°F (190°C).
  • Prepare the Base: In a large bowl, mix cooked chicken, rice, broccoli, cream of chicken soup, milk, 1 cup of shredded cheese, garlic powder, onion powder, salt, pepper, and sour cream (if using).
  • Assemble: Spread the mixture evenly into a greased 9×13-inch baking dish.
  • Top It: Sprinkle the remaining ½ cup cheese over the top. Mix crushed crackers (or breadcrumbs) with melted butter and sprinkle over the cheese.
  • Bake: Place in the oven and bake for 25-30 minutes, or until the cheese is bubbly and the topping is golden brown.

Notes

  • Leftover rotisserie chicken or cooked turkey works perfectly in place of the cooked chicken breasts.

  • If you don’t have fresh or frozen broccoli, you can use canned broccoli, but be sure to drain it well.
