These cottage cheese cheesecake bites are a delightful, guilt-free treat that combines creamy texture with a light and refreshing taste. They’re easy to make and customize, perfect for snacks, parties, or a healthier dessert option. They offer a protein-rich alternative to traditional cheesecake, making them a satisfying choice.
1 cup cottage cheese
1/4 cup sweetener (honey, maple syrup, or your preferred option)
1 large egg
1 tablespoon lemon juice
1 teaspoon vanilla extract
Optional Add-ins: cinnamon, nutmeg, citrus zest, berries, chocolate chips, nuts, etc.
Preheat oven to 350°F (175°C).
In a blender or food processor, combine the cottage cheese, sweetener, egg, lemon juice, and vanilla extract. Blend until smooth.
If desired, add any extra flavors or ingredients like spices, zest or fruit. Gently fold them in.
Pour the mixture into small, greased baking molds (mini muffin tins work well).
Bake for 15-20 minutes, or until the bites are set and lightly golden. They should still jiggle slightly in the center.
Let the bites cool completely in the molds before transferring to a serving dish.
Refrigerate for at least 30 minutes before serving. Garnish with toppings if desired and enjoy!
For a smoother texture, blend the cottage cheese on its own before adding other ingredients.
Don’t overbake the bites; they should be slightly soft in the center when you take them out.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
You can adjust the sweetness to your liking by adding more or less sweetener.
Get creative with flavors and toppings! Add fresh or frozen fruits, nuts, chocolate, or a sprinkle of spices.
