Instructions

Layer the Ingredients: Place half of the cubed potatoes in the Dutch oven. Top with half of the sliced onions and half of the minced garlic. Sprinkle with half of the rosemary, thyme, salt, pepper, and paprika (if using).

Repeat Layers: Layer the remaining potatoes, onions, garlic, and seasonings over the first layer.

Add Fat: Drizzle the remaining olive oil or melted butter evenly over the potatoes.

Cook: Place the lid on the Dutch oven and place it over a bed of hot coals or on a grill over medium heat. You want it to simmer, not burn. Rotate the lid every 10 minutes for even heating and heat from the bottom.

Cook Time: Cook for approximately 45-60 minutes, or until the potatoes are tender and easily pierced with a fork. Check and stir the potatoes halfway through, being careful of the hot pot.
