Watermelon Cake: A Refreshing and Healthy Dessert for Any Occasion

Description

A refreshing and visually stunning “cake” made entirely from fresh watermelon and fruit. It’s a perfect healthy and hydrating dessert for summer gatherings, potlucks, or a fun, light treat. This “cake” is naturally vegan, gluten-free, and requires no baking!


Ingredients

  • 1 large seedless watermelon (oval or round), preferably firm and ripe

  • 1 pint fresh blueberries

  • 1 pint fresh strawberries, hulled and halved

  • 1/2 pint fresh raspberries

  • 1/2 cup fresh mint leaves

  • Optional: Other fruits for decoration (kiwi slices, orange slices, grapes, etc.)

  • Optional: 1/4 cup shredded unsweetened coconut for topping


Instructions

  1. Prepare the Watermelon Base: Wash the watermelon thoroughly. Cut off the top and bottom to create a flat surface. Using a large, sharp knife, carefully remove the rind, shaping the remaining watermelon into a cake shape (round or slightly oval). Pat it dry with paper towels to make sure it’s not too slippery.

  2. Create a Base: If desired, place the watermelon “cake” on a large platter or cake stand. You may want to place down a base layer of large mint leaves.

  3. Decorate the Top: Arrange the blueberries, strawberries, raspberries, and any other chosen fruits on top of the watermelon. Be creative with the design, making it look festive.

  4. Add Finishing Touches: Sprinkle the shredded coconut (if using) over the top. Gently tuck some fresh mint leaves around the base or on top as a garnish.

  5. Chill and Serve: If not serving immediately, chill the watermelon cake in the refrigerator for about 30 minutes to allow the fruit to set and become cold. Serve chilled.

Notes

  • Choose a watermelon that is firm and has a good, uniform shape for the best “cake” appearance.

  • Make sure the watermelon is thoroughly patted dry after removing the rind for best stability.

  • Feel free to use any of your favorite fresh fruits to personalize your Watermelon Cake.

  • This cake is best served the same day it is prepared. The watermelon can become watery over time.

  • If you want to make a tall cake, make two tiers out of 2 watermelons of differing sizes, and use bamboo skewers to hold together the tiers if necessary.
